As gypsum is widely used as an ingredient in household building materials, it is completely non-toxic. However, when the mineral is not properly processed, then it can become toxic. You can get gypsum poisoning when exposed to unprocessed gypsum.
The way this works is the following: When the unprocessed gypsum becomes damp it contains anaerobic bacteria which, when combined with water, turns the calcium sulphate into calcium sulphide. The calcium sulphide then produces a toxic gas called hydrogen sulphide.
